Highlights about the research on muscle and meat

This article focuses on a presentation of the special issue of “INRA Productions animales" entitled "Muscle and meat", which consists of 12 articles describing state of the art knowledge derived from the latest research on muscle and meat including fish. These articles synthetize findings of research conducted by a network of scientists from the INRA Department of Animal Physiology and Livestock Systems (PHASE) and some collaborators. The presented works focus mainly on three major objectives: understanding the effects of rearing conditions on product quality criteria in different animal species; identifying the mechanisms that determine the components of quality; developing methods for the prediction of quality.
